Your comments about the palate etc., suggest your doctor is an ENT. Is the doctor a sleep specialist or just an ENT?

You need to go to a sleep specialist. There are a large number of sleep disorders and your problem is apparently not apnea. You may want to ask the sleep lab for sleep specialist in your area.
