It really sounds like sleep apnea. Do not waste any time getting to a doctor and getting a sleep test. You say you've never really wakened "gasping for air," but on many occasions have wakened with a "choking sensation." I think that's a pretty fine line there; either way, your body is telling you it's being significantly deprived of air to the point of getting desperate to wake you and get you breathing again.
