You should read the book by William C. Dement titled "The Promise of Sleep". If you read that book, you will read about "REM Rebound". I suspect that what you describe could be this phenomenon. REM Rebound is common in people who have suffered with OSA and who are in the early stages of successful treatment. Basically, when you had untreated OSA, you woke up without getting enough REM sleep. Now, your body is correcting the deficit. It is playing catch up. It is a good sign. It means that your treatment is working. Also, there is a good chapter in that book on what REM sleep does. There are hormones secreted during that phase of sleep. In addition, it is thought that REM sleep is important for a growing brain. It is theorized that our brains actually grow/develop even during adulthood, although to a minor extent.

You mentioned that this happens whether or not you are using CPAP. If it is REM rebound, it seems odd that it would happen when you did not wear your CPAP. However, one key thing - the fact that you began to notice the increase in vivid dreams only after you began treating your OSA makes me think that REM rebound is likely what is the cause of what you describe.
