Your symptoms certainly fit the bill for some sort of sleep disorder, if not apnea. There are 80-some sleep disorders the last time I checked. Not everyone with sleep apnea snores or is overweight and probably don't all have headaches, either.

You need a doctor's referral for an overnight sleep study for starters. Read the book "The Promise of Sleep" by Dr. Dement of Stanford University. This is a link to Stanford's portal for sleep disorders.
