I think people have probably hesitated to respond because you ultimately are asking a legal question.
I don't know the size of your bills or what your health insurance would cover, but it seems the sleep center would be worried about being guilty of malpractice, and that it should be willing to settle.
One possibility might be to talk to your own insurance company. Once, when my wife's insurance company failed to take responsibility, I let my insurance company fight/negotiate with it, and their lawyers did the work. Later I sued in small claims court for reimbursement for our share.
