The jolts and gasping for air are related to OSA. Most of the time when an apnea occurs you will not wake up
fully, there will be a brief arousal and you will have no recollection of the event. People diagnosed with
severe OSA typically never wake up during the night and have no idea why there are so exhausted in the
morning. Most make a lot of noise, some don't.

You should get a referal to a sleep clinic in your area.
