It's quite possible to have apnea without obvious symptoms. If you even sometimes wake up gasping for air, that's more than I've ever done. Sometimes I've woken up sweating (which I gather can be a symptom), and I am a snorer (but so are many people). My main symptom was excessive daytime sleepiness, and my doctor sent me to a sleep lab, figuring that I didn't have apnea (I also don't fit the "standard" profile because I am thin) but I must have something. But it was apnea. One time during the test I stopped breathing for more than a minute. Later, one time my wife saw my chest moving but couldn't feel any air coming out of my nose.

Sandman is right; a sleep lab is the best way to find out. A good one won't just check for apnea, but will check for a variety of sleep disorders. A nice thing about apnea if you have it is that it is actually pretty straightforward to treat.
