Have you seen an ENT (ear, nose, and throat/otolarygologist)? Perhaps someone should run a scope down your throat to check for problems.

If your gastrointestinal problems cause reflux, that might help to explain the throat problems.

It doesn't sound as if you have apnea, and sleep problems can come from many sources.
