It does sound like he may be experiencing many of the things that a person with obstructive sleep apnea does. I don't remember if you mentioned if he is excessively sleepy during the day but that is a key indicator of sleep apnea.
Regarding his temperment. Many people with sleep apnea also have described mood swings and often depression.
Regarding his ability to do work or school requirements I can attest to the fact that sleep apnea is a triple threat against any mental concentration. Sleepiness, memory problems and lack of concentration can seriously hurt any productivty.
Regarding the fear at night I remember that before I got my tracheostomy surgery to treat me sleep apnea I would have terrifying dreams. The dreams were often very lucid. I have read some people suggest that the struggle to breath may triger the "fight or flight" response in your body so that may explain the dreams and sweating. I know that my youngest son who has allergies will have nightmares when he forgets to take his medicine. I assume it is because he is struggling to breath.
Since your son has had accidents that affect the nose and sinuses the solution to his problem may be different than what you will find on this forum though.
