You have your most vivid recall of dreams in REM sleep. And unless you wake up during the dream you usually do not remember them. You do dream in Non-REM sleep also, however if you were to wake up during them you would have a hard time remembering and what you remember would be less vivid. So if you have a really vivid dream and you remember it is a sign you have been in REM sleep.
