Having a pressure too high can result in central apneas, in which the body doesn't try to breath. I don't know how bad that can get.

Tou refer to diabetics adjusting their insulin doses. I don't know, but I think diabetics would measure their blood sugar first. We don't have a real good way of measuring our pressure need. How we feel the next morning maybe isn't good enough.
As you say, an AutoPAP would seem to be your solution. Adjusting the min and max pressures would still be an issue. If the min is too low, it may take a long time to adjust up to the right pressure. It may not make it at all.
