One of the often not mentioned symptoms of sleep apnea is acid reflux. This is caused by your abdomen going into spasms trying to get you to breath forcing the contents of your stomach into your throat and mouth. The stomach acid will burn your airway and cause you to choke and gasp until you can breath normally. I experienced this several times before I was diagnosed and began CPAP. Since beginning CPAP I have not had this happen again.
Get a sleep study ASAP.
