Food Allergies

To those of you with food allergies...
I'm considering trying to figure out if I have food allergies and I am wondering how long, in general, does it take for you to notice an allergic reaction to something you've eaten. Particularly the kind of reaction that produces nasal drainage/stuffiness. Does it happen right away, within the hour, that day, or possibly even later? Is it possible to have a tolerance threshold where if you eat more than a certain amount you react? Is there any place that has more information about this? I don't know why but when I had my allergy test and I questioned the doc about food allergies he acted like there was no such thing, or at least not worth worrying about. Of course, now I know they don't know everything! LOL
