The two primary problems with sleep apnea are disrupted sleep, and lowered O2 saturation. The lowered O2 can be a very severe problem, but for many of us it just isn't that bad. On the other hand virtually all of us suffer from sleep deprivation and the resultant sleep debt. Even mild apnea and the resultant sleep deprivation can cause severe problems.
Severe oxygen desaturation can cause serious problems and in some cases death. It is related to heart problems, dementia, and other difficulties. The list of problems associated with sleep deprivation/debt is much longer and in some respects a much more serious problem.
I believe the symptoms of sleep deprivation/debt would be the more noticable and the more troublesome. For many of us, they are probably the more serious problem. This is not to say of course that if you stop breathing for a long enough time period, that the results will be on the extreme side, depending on how you rate death in the grand scale of things, of course.
As far as the benefits of pulse oximetry in tracking sleep apnea. It is typically of little benefit. It has been shown that using this tool to screen or as a diagnostic tool for sleep apnea is pretty much useless.
