It's probably an artifact. It all depends on how the sleep system you were recorded on calculates heartrate, and how the techs score it. In many systems using simple R-R interval analysis the rate is calculated by computing the time between R waves. If you move artifact is picked up by the electrodes. Sometimes the ECG will try to analize the artifact and score it as a high heart rate. If the techs don't remove that epoch from the scoring, it will show up as a spike.
