I think it has a lot to do with the fact that apnea interrupts the production/recycling of serotonin which occurs during normal sleep.
Anti-depressants try to raise your level of serotonin, a nuerotransmitter responsible for regulating mood and appetite, among other things.
I do not believe there is any simple test for the levels of any of the neurotransmitters. There may be some really fancy imaging tests being developed (like MRS, a very fancy MRI), but no simple blood tests.
If you are taking anti-depressants, you will want the doctor that is prescribing them to know about your apnea and CPAP therapy. Like a lot of other medications, your need for them may lessen once you start getting some good sleep.
