5yr old cries in sleep

My son is 5yrs. old and cries in his sleep. He usually starts in about 1-2 hours after he goes to sleep. He is not awake, and if you talk to him he doesn't respond. It goes from just whimpering to full out sobbing. I don't know what is going on.

He does get very sweaty when he sleeps and occasionally sleepwalks. Last week he came into the kitchen, ate an entire pudding cup and held a conversation with me. He had no memory of this the next morning. He had surgery last week to remove his adnoids which were causing sleep apnea. The crying is not related to pain. He also wakes up several times during the night and tries to climb into bed with us. Has anyone else ever experienced any of this? I am most concerned about the sleep crying. Thank you!
