Very similar issues to my 5 year old. He'll wake up around 2-3 hours into the night with what seems like a bad dream or night terror and be upset, kind of crying, that if left unattended will go to either full on crying or he gets up and comes and gets in bed with us. He does seem to go back to sleep quickly but then he is like sleeping with a bucking horse sometimes. He's had his adnoids removed at 1 year old, and tonsils around 1.5 years old. Been living with this for too long, and don't have any advice but searching for some as well.
