Of course your sleeplessness is because of your "overly sensitive sense of hearing!"
That is because you are a Mother. I guess that God just designed Moms with a more acute sense of hearing than men.
Personally, I think your husband should be concerned for his own safety, as well as that of his family, if, in fact, he is a sleep-walker.
My guess is that when you guys are driving somewhere, he has problems staying awake and alert while driving.
You might try finding out what kind of coverage your medical insurance has, in the area of treatment of sleep disorders. Especially, if the sleep doctor thinks it is a "life-threatening" problem, the insurance companies are likely to cover the entire cost of the testing, and, if you can find a "preferred provider" (if your insurance company has anything like that), they might pay the total cost of the treatment (Nasal CPAP machine, etc.)
By the way, have you tried audio taping some of his snoring, or setting up a video camera, to tape some of his sleep antics?
