You shouldn't be alone in dealing with this nightly.. your girlfriend, not to mention her sister, needs professional help, by a psychologist or psychiatrist (not a PCP,) so make use of what limited mental health coverage her insurance might give!
There is a technique from Jungian (I think) psychoanalysis called "directive dreaming" where the patient who is dealing with a issue that manifests itself in dreams learns to recall and control better the action in the dream as a therapeutic tool.
I hear it's good fun for the non-nightmare people too!
