Waking infant to feed?

I'm a first time father, and our 3 week old son usually goes down around 8 in the evening. We have been waking him up around midnight to give him a bottle, then he usually falls back to sleep right away. He'll wake up again around 3, eat, but then gets irritated until around 5 or 6 when he falls asleep again. Should we just let him sleep as long he can when he first goes down in the evening? Or is waking him up to eat the right thing to do? I'm wondering if letting him sleep longer in the evening and just let him wake up at his own schedule would keep him drowsier in the morning? Any tips?
