Debbie, I think 11 weeks is too old to expect your baby to be on a schedule. If you absolutely must go back to work and put him in daycare, find a daycare that better understands the needs of an infant that young. They should know that a baby of that age would still be on an 'on demand' schedule. Better yet - try to stay home.
