What you are describing sounds like it could be a breathing related sleep disorder during sleep.

Try watching him sleep, a video would be better.

During sleep if she is making noise, moving around a lot, sweats, breaths through her mouth, or makes extra effort to breath, you should take her to a pediatric sleep specialist who is boarded in sleep medicine. Taking care of this problems early in life is very important.

There are other sleep disorders that can cause disrupted sleep and should be checked for, however, difficulty breathing during sleep is the most common.
