Have you talked to your doctor about this? I don't think anyone here would really be qualified to give you advice on this other than you should stop taking it with wine because the warnings tell you not to.
I will say, that after you've discussed this with your doctor, that you will probably be reassured that missing one night of sleep isn't really a big deal, and if you're really concerned about it you could always plan to do it on a night where you don't have to work the next day. I didn't miss a whole night's sleep after my longest Ambien streak anyways, though, but that was more like three weeks of taking it every night. As a matter of fact I think I got at least six and a half hours of sleep.
