Your best bet for the severity of your sleep apnea is CPAP. However, if you are unable to tolerate CPAP, get a second opinion from an ENT doctor. If you can go to Stanford, great. But if not, look for an ENT doc who has finished their training in the past 5 years. Many of the procedures are fairly new so some of the older doctors don't know how to do them.
