Based on my own experience, you really won't *need* someone waiting on you at all. It's just reassuring the first few days home. Your energy wil be very low and it's probably good to have someone around as you walk around and up and down stairs to make sure you don't get dizzy and fall. After a few days you will be OK on your own - although be prepared for a little post-surgical depression within the first week.
Getting up and going to the kitchen for more Ensure will definitely help your recovery. You may find yourself being more active than you expect, but you will have a tiny store of energy - as soon as you exceed it you will crash.
