Alcohol relaxes the muscle tone in your throat, hence the increased snoring and apnea. If I have a few drinks before bed, my O2 sat plummets.

The carb angle is interesting. I have noticed that I sleep worse if I have a big meal in the evening. I never thought it might be tied to carbs though.
