And, that enzyme deficiency is responsible for variants of "Asian drinking syndromes" where we turn red after a drink, and or don't hold it as well as others with normal liver function.

The auto endogenous ETOH production is a bit extreme though...it is kind of a "HOUSE" diagnosis :-), assuming that you have precisely the right conditions in your gut to ferment said ETOH (as you've stated).
