You had a LOT done at once! It's no surprise that it's hard to handle right after surgery.
I think the way you are approaching it might be good in the long run (hitting both the palatal AND nasal obstruction points) but it's hard to handle that much recovery at once (as you have seen). I hope by now you're able to get some sleep.
As far as pain management - there's only one rule - don't be a WUSS - take any meds prescribed ON TIME. I am convinced (and there is plenty of data to back this up) that those in pain have their healing abilities compromised. Are you getting any meds? If not, get to your doctor and insist on it! I've had about half of what you describe (not at one time though) and no way could I recuperate without effective pain medication...
The tonsillectomy and UP will probably keep hurting for another week and then start lessening. The nasal stuff should be feeling better sooner than that.
IF you are continuing to feel worse, there may be a secondary infection and you'd want to call your surgeon. It's really never a bad thing to call your surgeon and ask - most times you'll get an assistant or something and they'll explain that this is typical - but once on awhile they might hear something unfamiliar or alarming and ask you to come in. (Either way, you are doing the right thing in getting more clarity.)
