You sound as though you don't have regular sleeping patterns (i.e. "even on nights when I've gotten 8 or 9 hours....") Do you vary from 3-9 hours depending on your schedule? The most important part of sleep is to find your groove and stick with it. I've found that a nap does wonders, and I encourage a nap for most people. We are bombarded with so much input throughout our days that our mental faculties overheat and we need to shut down and cool our co-processors. Most of the time this will happen when our bodies are the least challenged (when driving, watching TV, studying, etc..), or often it happens right after eating. I recommend finding the time of day you ar most tired and taking a 1/2 hr. to 1 hr. nap, to be followed by some form of physical activity (a walk, washing dishes, a workout) to "re-awaken" the body for the rest of the day.
Of course, if you're developing a mild form of narcolepsy, I suggest seeking out medical help. But by the sound of it, it appears you suffer from an inconsistent schedule and alot of data for your brain to process.
