I'm pretty impressed that you can recognize in your sleep when you get to the dream state!

I vaguely recall seeing a book or two sometime in the past about consciously shaping your dreams, so there may be some references available (Amazon?) about controlling how you think, but physical action may be a different story. Your body chemistry changes when you are in REM sleep, temporarily "paralyzing" you for the express purpose of preventing you from acting out when you are dreaming. To *not* do this is what causes sleep-walking, etc, and is considered a disorder. Check some research on the physiological changes of the different sleep phases.
If you're trying to get to an altered state of mental perception, maybe you can look into some self-hypnosis techniques instead - at least you won't be fighting your neurotransmitters that way.
