By not knowing the nature of your work it is difficult to write the schedule. The second is more realistic unless you have an employee that wants four days off a week. Regardless here are two options. (I hope the format does not get messed up!)
Option 1 (x's are days off)
Slot 1-x x x x 8hr 16hr 16hr (Off 4 days a week)
Slot 2-8 8 8 x x 8hr 8hr (maybe rotate 2 to 3)
Slot 3-Days M-F off Sat Sun
Slot 4-Eves M-F off Sat Sun
Slot 5-Mids M-F off Sat Sun
I would need more information to pick what hours are worked on the 16's. In other words can the employee nap if they work 3p-7a?
Option 2:
Slot 1-x x x 8 8 12 12 (off 3 days)
Slot 2-8 8 x x x 12 12 (off 3 days)
Slot 3-Days M-F off Sat Sun
Slot 4-Eves M-F off Sat Sun
Slot 5-Mids M-F off Sat Sun
