Research has been done on this. A doc from California (Ron Harper?..) found that he could determine REM and NREM based on heart rate... I think this reasearch was done in the 1990's..
Hobson and Stickgold have done tons of research on body movement and eye movement. They have been able to accurately determine REM and NREM based on two parameters. They use only a body position sensor and a thin piezo film placed on the eye lid to determine eye movement.
